Vegetable Soup with Baby Butter Beans and Brown Rice
- 1 quart vegetable or chicken broth, low sodium
- 1 can baby butter beans, about 15 ounces
- 1 small zucchini cubed
- 1 small yellow squash cubed
- 1 cup sliced carrots, fresh or frozen
- 1/2 cup uncooked brown rice
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 cup chopped onions, optional
- Salt and fresh cracked pepper to taste
Place everything in Slow Cooker, turn on high and cook for about 3 hours or until vegetables are tender.
