Vegetable Soup with Baby Butter Beans and Brown Rice

  • 1 quart vegetable or chicken broth, low sodium
  • 1 can baby butter beans, about 15 ounces
  • 1 small zucchini cubed
  • 1 small yellow squash cubed
  • 1 cup sliced carrots, fresh or frozen
  • 1/2 cup uncooked brown rice
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 cup chopped onions, optional
  • Salt and fresh cracked pepper to taste

Place everything in Slow Cooker, turn on high and cook for about 3 hours or until vegetables are tender.
