Chocolate Chip Banana Mug Cakes

  • 1/2 cup gluten free or regular pancake mix
  • 1 tablespoon sugar
  • 1 small-medium mashed ripe banana
  • 1 tablespoon cooking oil
  • 1 egg, slightly beaten
  • 1/4 cup chocolate chips, more or less

Mix all ingredients in a medium mixing bowl, except chocolate chips.

Spray 2 mugs or ramekins with cooking spray.

Pour half of batter in each mug or ramekin.

Sprinkle a few chocolate chips on top of each, save a few for top after cooked, if you like.

Cook in microwave 1-2 minutes, depends on your microwave wattage.

Serve warm or cooled.

Top with more chocolate chips, whip cream, or frosting.
