 Skillet Breakfast for One in a 6 inch skillet…


Skillet Breakfast for One

  • 1 egg
  • 1 small baked potato, cubed, peeled or unpeeled
  • 1 dinner size fully cooked or 2 fully cooked breakfast size sausages
  • 1/4 cup diced green peppers
  • 1/4 cup shredded cheese
  • 2 teaspoons butter
  • salt and pepper to taste

In a 6 inch skillet add butter, turn heat on medium, add sausage and green peppers, cook a few minutes.

Add cubed potatoes, cook until potatoes are slightly browned and tender.

Crack an egg on top of potatoes, break yolk or pour a scrambled egg over potatoes.

Turn with spatula until egg is cooked.

Add grated cheese on top, cook until cheese is melted.

Serve in skillet or transfer to a plate, If serving in skillet set on a wood board and use a pot holder, Handle is Hot!
