Orange Glazed Chicken and Broccoli
1/2 – 1 pound boneless chicken breast tenders
2 tablespoons olive oil
2/3 cup orange marmalade
2 tablespoons lower sodium soy sauce
1/2 teaspoon crushed red pepper flake (more or less to taste)
12 ounce frozen broccoli florets
Put olive oil in skillet on medium heat, add chicken cook a few minutes on each side.
Add orange marmalade and soy sauce, red pepper flakes, stir to blend together.
Spoon orange sauce over chicken.
Turn heat on low add broccoli around the edges of skillet with chicken in the middle.
Place lid on skillet and simmer until chicken is cooked thoroughly and broccoli is tender.
Serve over cooked rice.
