Corn Muffin Tops
Ingredients
- 1-1/2 cups self rising cornmeal (not mix)
- 1 cup milk
- 1 egg
- 1/8 cup cooking oil
- 2 tablespoons sugar
*Make sure to choose gluten free ingredients to make it gluten free!
Directions
- In a mixing bowl add the egg, slightly beat with a fork.
- Add in the milk, cooking oil, and sugar, mix.
- Add in the self rising cornmeal, stir until everything is blended together.
- Generously spray muffin top pan with cooking spray.
- Fill each well with 1/4 cup of batter.
- Bake in a pre heated 350° oven for about 15 minutes.
- Transfer to a cooling rack. Serve hot, warm or cooled. Enjoy!
- Makes about 12 muffin tops.
