Corn Muffin Tops

Ingredients

  • 1-1/2 cups self rising cornmeal (not mix)
  • 1 cup milk
  • 1 egg
  • 1/8 cup cooking oil
  • 2 tablespoons sugar

*Make sure to choose gluten free ingredients to make it gluten free!


Directions

  • In a mixing bowl add the egg, slightly beat with a fork.
  • Add in the milk, cooking oil, and sugar, mix.
  • Add in the self rising cornmeal, stir until everything is blended together.
  • Generously spray muffin top pan with cooking spray.
  • Fill each well with 1/4 cup of batter.
  • Bake in a pre heated 350° oven for about 15 minutes.
  • Transfer to a cooling rack. Serve hot, warm or cooled. Enjoy!
  • Makes about 12 muffin tops.
