Zucchini Fried Rice
Ingredients
- 3 cups cooked white
- 1 medium/large zucchini, cubed
- 1 cup thin sliced carrots
- 1 egg
- 2 tablespoons roasted garlic infused olive oil
- 1 tablespoon butter
- 2 tablespoons low sodium soy sauce
- sliced green onions for garnish topping
- salt and pepper to taste
Directions
- In a large skillet add olive oil turn heat on high.
- Add the zucchini and carrots, stir fry for about ten minutes.
- Stir in rice and mix with vegetables. Turn skillet down to medium.
- Push aside rice mix to make a clear spot in skillet, add butter.
- After butter is melted crack egg in cleared part of skillet, scramble.
- After egg is cooked mix in with rice and vegetables.
- Stir in the lower sodium soy sauce, completely mix everything together.
- Cook to heat through and serve, top with sliced green onions. Enjoy!
