Orange Marmalade Scones

Ingredients

  • 1 cup gluten free flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • pinch of salt
  • 1/4 cup orange marmalade
  • 1/4 cup butter, room temperature
  • 1/4 cup sour cream
  • 1 egg
  • extra marmalade when serving
  • *Make sure to choose gluten free ingredients to make it gluten free!

Directions

  • Sift together the flour, baking powder, baking soda, and salt, set aside.
  • In a medium mixing bowl cream together with a fork the butter, sour cream, and marmalade.
  • Add egg and beat everything together with a fork.
  • Add the flour mix to wet ingredients, completely blend together.
  • Form dough into a ball.
  • Sprinkle some flour on a piece parchment, wax paper, or counter top.
  • Place dough ball on sprinkled flour, pat and turn to coat with flour, until it is not sticking.
  • Pat dough down to about 1/2 to 3/4 inch thick, make a circle, fold in half and pat dough into a circle again, repeat one more time.
  • Cut dough circle with a knife into about about 8 wedges.
  • Spray a cookie sheet with cooking spray, place wedges on cookie sheet.
  • Bake in a preheated oven @ 380° oven for about 12 to 15 minutes, until golden brown.
  • Brush with orange marmalade while hot, transfer to cooling rack, serve with butter and extra marmalade. Enjoy!
