Ground Chicken Stuffed Peppers
Ingredients
- 1/2 pound lean ground chicken
- 1 large bell pepper, green, yellow, red, you choose
- 1 egg
- 1/2 cup cooked rice
- 1 teaspoon your favorite seasoning blend
- 1 teaspoon paprika
- 1 teaspoon onion powder
- salt and pepper to taste
- 8 ounce can tomato sauce
Directions
- Preheat oven to 350°, spray a small baking dish with cooking spray, set aside.
- In a medium mixing bowl add ground chicken, egg, cooked rice, and spices, mix completely together until everything is evenly blended.
- Cut the top off bell pepper, cut in half lengthwise, clean out seeds and rinse.
- Divide meat mixture in half and stuff into each bell pepper half.
- Place filled bell pepper halfs in baking dish, pour tomato sauce evenly over the top.
- Cover with lid or foil, Bake for about 55-60 minutes in preheated oven.
- Set on hot plate or cutting board. When serving spoon tomato sauce (gravy) on top and add your favorite sides, Enjoy!
