Ground Chicken Stuffed Peppers

Ingredients

  • 1/2 pound lean ground chicken
  • 1 large bell pepper, green, yellow, red, you choose
  • 1 egg
  • 1/2 cup cooked rice
  • 1 teaspoon your favorite seasoning blend
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 8 ounce can tomato sauce

Directions

  • Preheat oven to 350°, spray a small baking dish with cooking spray, set aside.
  • In a medium mixing bowl add ground chicken, egg, cooked rice, and spices, mix completely together until everything is evenly blended.
  • Cut the top off bell pepper, cut in half lengthwise, clean out seeds and rinse.
  • Divide meat mixture in half and stuff into each bell pepper half.
  • Place filled bell pepper halfs in baking dish, pour tomato sauce evenly over the top.
  • Cover with lid or foil, Bake for about 55-60 minutes in preheated oven.
  • Set on hot plate or cutting board. When serving spoon tomato sauce (gravy) on top and add your favorite sides, Enjoy!
