Oatmeal Chocolate Chip Cake
Ingredients
- 1/3 cup quick oats
- 1/2 cup boiling water
- 1/2 cup regular or gluten free all purpose flour
- 1/2 teaspoon baking soda
- 1/4 cup shortening or butter, room temperature
- 1/3 cup sugar
- 1/3 cup light brown sugar
- 1 egg
- 1/4 cup milk
- 1/2 teaspoon vanilla flavor
- 1/2 cup semi sweet chocolate chips
Directions
- Preheat oven to 350°, Spray a 7 inch round cake pan with cooking spray, set aside.
- Mix together the quick oats and boiling water in a small bowl and set aside.
- In a medium mixing bowl mix together the shortening and sugars, then add the egg, mix.
- Add the flour and baking soda, mix completely everything together.
- Add the oatmeal mixture and completely mix until everything is combined.
- Fold in the chocolate chips, pour batter into prepared cake pan.
- Bake in preheated oven for about 30 minutes, until a toothpick inserted in center comes out clean.
- Set on a cooling rack let cool, transfer to a serving dish if you like and frost with your favorite butter cream frosting. Cut and Serve. Enjoy!
