Oatmeal Chocolate Chip Cake

Ingredients

  • 1/3 cup quick oats
  • 1/2 cup boiling water
  • 1/2 cup regular or gluten free all purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 cup shortening or butter, room temperature
  • 1/3 cup sugar
  • 1/3 cup light brown sugar
  • 1 egg
  • 1/4 cup milk
  • 1/2 teaspoon vanilla flavor
  • 1/2 cup semi sweet chocolate chips

Directions

  • Preheat oven to 350°, Spray a 7 inch round cake pan with cooking spray, set aside.
  • Mix together the quick oats and boiling water in a small bowl and set aside.
  • In a medium mixing bowl mix together the shortening and sugars, then add the egg, mix.
  • Add the flour and baking soda, mix completely everything together.
  • Add the oatmeal mixture and completely mix until everything is combined.
  • Fold in the chocolate chips, pour batter into prepared cake pan.
  • Bake in preheated oven for about 30 minutes, until a toothpick inserted in center comes out clean.
  • Set on a cooling rack let cool, transfer to a serving dish if you like and frost with your favorite butter cream frosting. Cut and Serve. Enjoy!
