Chicken and Green Bean Stir Fry
INGREDIENTS
- 8 to 12 ounces boneless chicken breast sliced
- 12 ounces fresh or frozen green beans, lightly steamed
- 1/2 red bell pepper, sliced
- 3 tablespoons olive oil or cooking oil
- 2 tablespoons corn starch
- 1 teaspoon onion powder
- Fresh ground pepper to taste
- 1/2 cup chicken broth, more if needed
- 2 tablespoons low sodium soy sauce
- 3 tablespoons chile or bbq sauce, sweet and spicy, or your favorite
DIRECTIONS
- On a plate, mix corn starch, onion powder and black pepper mix. Cover chicken slices with the corn starch mix, set aside.
- In a small bowl mix together the broth, soy sauce, and sweet and spicy sauce, set aside.
- Turn burner on medium/high, in a large skillet add olive oil, next add chicken slices, stir fry for about 4 minutes.
- Add the steamed green beans, and red pepper slices, stir fry for another few minutes.
- Next add the liquid mix, keep stirring to blend everything together, sauce should start to thicken. Turn heat down to low, add a little more chicken broth if sauce gets to thick.
- Cook for another 5 minutes, make sure chicken is completely done.
- Turn off burner, Serve over cooked rice. Serves 2-3. Enjoy!
