Dill Pickle Potato Salad

Ingredients

  • 2 medium potatoes cooked, peeled, and cubed
  • 2 hard boiled eggs
  • 2-3 small dill pickles diced
  • 1/4 cup mayonnaise
  • 1 tablespoon yellow mustard
  • 3 tablespoons sliced green onion tops
  • Salt and pepper to taste

Directions

  • Wash and Boil unpeeled potatoes until cooked through, drain and rinse in cold water.
  • In a medium mixing bowl, cut cooled peeled potatoes into cubes, add cut up hard boiled eggs, cut up dill pickles, and green onions, fold everything together.
  • Add the mayonnaise and mustard, mix until everything is completely blended.
  • Add salt and pepper to taste, refrigerate until ready to serve, makes about 4 servings. Enjoy!
