Dill Pickle Potato Salad
Ingredients
- 2 medium potatoes cooked, peeled, and cubed
- 2 hard boiled eggs
- 2-3 small dill pickles diced
- 1/4 cup mayonnaise
- 1 tablespoon yellow mustard
- 3 tablespoons sliced green onion tops
- Salt and pepper to taste
Directions
- Wash and Boil unpeeled potatoes until cooked through, drain and rinse in cold water.
- In a medium mixing bowl, cut cooled peeled potatoes into cubes, add cut up hard boiled eggs, cut up dill pickles, and green onions, fold everything together.
- Add the mayonnaise and mustard, mix until everything is completely blended.
- Add salt and pepper to taste, refrigerate until ready to serve, makes about 4 servings. Enjoy!
