Ground Turkey Vegetables and Rice Bowl
Ingredients
- 1 pound lean ground turkey
- 6 ounces sliced frozen carrots, half of a frozen bag
- 6 ounces thin frozen green beans, half of a frozen bag
- 1 small fresh zucchini, cubed
- 2 large handfuls fresh spinach
- 1 tablespoon low sodium soy sauce
- 2 teaspoons Worcestershire sauce
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 4 tablespoons olive oil
- 2 tablespoons butter
- 3 cups cooked rice, kept warm
- parsley, sliced green onions, for garnish
- salt and fresh ground pepper to taste
Directions
- Turn burner on medium heat, in a medium skillet add the 2 tablespoons olive oil, then ground turkey, add the spices, soy sauce, Worcestershire sauce, mix and break up meat with a fork stir and brown until completely cooked.
- In another skillet turn burner on medium high add 2 tablespoons olive oil, carrots and green beans stir fry for a couple minutes.
- Add 1/2 cup of water cover with lid to steam for a few minutes until water is gone, turn burner down to low, add the diced zucchini, cover and cook a few more minutes until veggies are tender, add the spinach and mix in, turn off heat, cover with lid and let spinach wilt.
- Serve in dinner bowls, refer to photos, top with butter on veggies if you like, garnish with parsley and sliced green onions, Serve 3-4. Enjoy!
