Chicken and Black Beans over Rice

Ingredients

  • 1 large boneless skinless chicken breast, or about 8-12 ounces, cut in to bite size pieces
  • 1 can diced tomatoes with green chiles, 10 ounces, ( rotel )
  • 1 can black beans, 15 ounces, drained and rinsed
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 1 teaspoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 4 ounces shredded cheddar cheese, more or less
  • sour cream, when serving for topping, optional
  • sliced green onions, optional
  • 3 cups hot cooked rice, enough for 2-3 people
  • salt and pepper to taste

Directions

  • Turn burner on medium add butter and olive oil, stir in chicken, cook for about 5 minutes or so.
  • Add the tomatoes, black beans, and all the spices, stir everything together let cook for about 8 minutes.
  • Serve over hot cooked rice, add shredded cheese on top and garnish with green sliced onions and sour cream if you like.
  • Serves about 2-3 people. Enjoy!
