Chicken and Black Beans over Rice
Ingredients
- 1 large boneless skinless chicken breast, or about 8-12 ounces, cut in to bite size pieces
- 1 can diced tomatoes with green chiles, 10 ounces, ( rotel )
- 1 can black beans, 15 ounces, drained and rinsed
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 4 ounces shredded cheddar cheese, more or less
- sour cream, when serving for topping, optional
- sliced green onions, optional
- 3 cups hot cooked rice, enough for 2-3 people
- salt and pepper to taste
Directions
- Turn burner on medium add butter and olive oil, stir in chicken, cook for about 5 minutes or so.
- Add the tomatoes, black beans, and all the spices, stir everything together let cook for about 8 minutes.
- Serve over hot cooked rice, add shredded cheese on top and garnish with green sliced onions and sour cream if you like.
- Serves about 2-3 people. Enjoy!
