Chicken Swiss Cheese and Rice Bake
Ingredients
- 1 pound boneless chicken breast, sliced lengthwise in half
- 1 cup rice
- 1 can cream of chicken soup
- 1&1/2 soup cans of milk
- 1/2 stick butter cut in slices
- 8 ounce package of Swiss cheese, sliced
- 1 package frozen broccoli florets, 12-16 ounces
- 2-3 teaspoons umami seasoning, or your favorite seasoning blend
- Parsley to sprinkle for garnish
Directions
- Preheat oven to 350°
- In a medium mixing bowl, mix the cream of chicken soup and milk together, set aside.
- Spray your casserole or baking pan with cooking spray, add the rice.
- Pour the soup mixture in the pan and stir with rice.
- Place half of the slices of Swiss cheese over rice, sprinkle with seasoning.
- Set the sliced chicken over the rice and cheese.
- Add the broccoli evenly around the chicken pieces.
- Set the butter slices on top of the chicken pieces.
- Place the remaining cheese slices over the chicken.
- Sprinkle with more seasoning and parsley if you like.
- Bake for about 50-60 minutes. Until chicken is done.
- Great with a side of stuffing and whole cranberry sauce. Serve and Enjoy!
