Blueberry Crisp

Ingredients

  • 1 1/2 cups quick oats
  • 1/4 cup regular or gluten free baking mix
  • 1/3 cup light brown sugar
  • 6 tablespoons melted butter
  • 2 cups fresh blueberries
  • 3 tablespoons sugar

Directions

  • Preheat oven 350°, spray a small baking dish with cooking spray, set aside.
  • In a small bowl add blueberries and fold in the 3 tablespoons of sugar, set aside.
  • In a medium mixing bowl mix together the quick oats, light brown sugar, pour the melted butter evenly over oats mixture and blend completely.
  • Divide oats mixture in half, sprinkle half into prepared baking pan, cover bottom, and press down.
  • Top bottom crisp with sugared blueberries, sprinkled the remaining oats mixture on top.
  • Bake in 350° preheated oven for about 45 minutes. Place on cooling rack.
  • Serve warm or completely cooled, top with whipped cream or ice cream. Enjoy!
