Blueberry Crisp
Ingredients
- 1 1/2 cups quick oats
- 1/4 cup regular or gluten free baking mix
- 1/3 cup light brown sugar
- 6 tablespoons melted butter
- 2 cups fresh blueberries
- 3 tablespoons sugar
Directions
- Preheat oven 350°, spray a small baking dish with cooking spray, set aside.
- In a small bowl add blueberries and fold in the 3 tablespoons of sugar, set aside.
- In a medium mixing bowl mix together the quick oats, light brown sugar, pour the melted butter evenly over oats mixture and blend completely.
- Divide oats mixture in half, sprinkle half into prepared baking pan, cover bottom, and press down.
- Top bottom crisp with sugared blueberries, sprinkled the remaining oats mixture on top.
- Bake in 350° preheated oven for about 45 minutes. Place on cooling rack.
- Serve warm or completely cooled, top with whipped cream or ice cream. Enjoy!
