Chicken Parmesan Meatloaf
Ingredients
- 1 pound lean ground chicken
- 1 egg
- 1/3 cup pasta sauce
- 1/3 cup bread crumbs or quick oats
- 1/4 cup shredded parmesan cheese
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- 1 teaspoon dried Italian seasoning
- salt and pepper to taste
- 1/3 cup pasta sauce (for top)
- 1/2 cup shredded mozzarella cheese (for top)
- Italian seasoning to garnish top
Directions
- Preheat oven to 350°, lightly spray a 9×5 loaf pan with cooking spray, set aside.
- In a medium mixing bowl, add ground chicken, egg, onion powder, garlic powder, Italian seasoning, parmesan cheese, 1/3 cup pasta sauce, bread crumbs, and salt and pepper to taste. Mix everything until completely blended.
- Add mixture to the baking dish, spread evenly. Spread the other 1/3 cup of pasta sauce on top of meatloaf, next add the mozzarella cheese on top, evenly down the middle. Sprinkle a little Italian seasoning over cheese to garnish.
- Cover with foil and bake in preheated oven for 60 minutes.
- Set on cooling rack let sit for about 5 minutes before slicing. Serve and Enjoy!
