Chicken Parmesan Meatloaf

Ingredients

  • 1 pound lean ground chicken
  • 1 egg
  • 1/3 cup pasta sauce
  • 1/3 cup bread crumbs or quick oats
  • 1/4 cup shredded parmesan cheese
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried Italian seasoning
  • salt and pepper to taste
  • 1/3 cup pasta sauce (for top)
  • 1/2 cup shredded mozzarella cheese (for top)
  • Italian seasoning to garnish top

Directions

  • Preheat oven to 350°, lightly spray a 9×5 loaf pan with cooking spray, set aside.
  • In a medium mixing bowl, add ground chicken, egg, onion powder, garlic powder, Italian seasoning, parmesan cheese, 1/3 cup pasta sauce, bread crumbs, and salt and pepper to taste. Mix everything until completely blended.
  • Add mixture to the baking dish, spread evenly. Spread the other 1/3 cup of pasta sauce on top of meatloaf, next add the mozzarella cheese on top, evenly down the middle. Sprinkle a little Italian seasoning over cheese to garnish.
  • Cover with foil and bake in preheated oven for 60 minutes.
  • Set on cooling rack let sit for about 5 minutes before slicing. Serve and Enjoy!
