Sour Cream Almond Coffee Cake

Cake Ingredients

  • 3/4 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 2 eggs
  • 1/3 cup sour cream
  • 1/3 cup sugar
  • 1/4 cup cooking oil
  • 1 teaspoon almond extract

Topping Ingredients

  • 1/4 cup sugar
  • 1/4 cup flour
  • 3 tablespoons melted butter
  • 1/4 cup slivered almonds
  • 1-2 tablespoons powdered sugar

Directions

  • Preheat oven to 350°, spray an 8 inch square baking dish with cooking spray, set aside.
  • In a medium mixing bowl add eggs, sugar, sour cream, cooking oil, and almond extract and mix together completely.
  • Add the flour, baking powder, and baking soda, beat everything together.
  • Pour batter into prepared baking dish, Mix together topping ingredients and sprinkle evenly on top of batter.
  • Bake in the preheated oven for about 30 minutes or until a toothpick entered in the center comes out clean.
  • Transfer to a cooling rack, let cool and sift powdered sugar on top, if you like. Cut and Serve, Enjoy!
