Chicken and Tomatoes with Green Chilis over Rice
Ingredients
- 1 large boneless chicken breast, cut lengthwise in half, about 10-12 ounces
- 2 cans tomatoes with green chilis, like Rotel
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1/3 cup diced green pepper
- 1 tablespoon chili powder
- 1 tablespoon ground cumin
- 1 tablespoon onion powder
- 1 tablespoon garlic powder
- salt and pepper
- 1/2 pound shredded colby jack cheese, more or less if you like
- 2-3 cups cooked rice
Directions
- Mix together all the spices in a small bowl, add salt and pepper to taste, sprinkle seasonings on both sides of each chicken piece. Save leftover seasoning mix, add more in the tomatoes if you like.
- In a large skillet add the olive oil and butter, turn heat to medium, lay chicken breast in skillet, cook about five minutes on each side.
- Add the cans of tomatoes, chopped green pepper, turn heat down to medium low, let simmer until chicken is completely cooked. Turn off heat.
- Sprinkle cheese on top of chicken and tomatoes, cover with lid until cheese is melted or serve over rice on plates and sprinkle with cheese.
- Serve over hot cooked rice. Enjoy!
