Saute` Paprika Chicken Breast over Pasta

Ingredients

  • 1 large boneless chicken breast, about 6-8 ounces, cut in half lengthwise
  • 2 teaspoons paprika, more if you like
  • 2 teaspoons Umami mushroom seasoning, or your favorite seasoning mix
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • salt and pepper to taste
  • 6 ounces pasta, cooked to package directions, save about half cup pasta water
  • Shredded parmesan cheese, parsley, green onions, for top, your choice, if you like

Directions

  • In a medium size skillet, on medium heat, add the olive oil and butter, add the chicken and sprinkle with paprika and seasonings, on both sides.
  • Let chicken cook about 5 minutes on each side until cooked completely through.
  • Transfer cooked chicken to a plate, set aside.
  • Add the cooked pasta in same skillet, add a little of the pasta water, stir to incorporate the pan drippings and seasonings, transfer pasta to two plates and set chicken on top of pasta.
  • Garnish if you like with parsley, green onions sliced, and parmesan. Make 2 servings. Enjoy!
