Mandarin Orange Dessert Cake
Ingredients
- 1 cup regular or gluten free all purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1 egg
- 1/3 cup sugar
- 3 tablespoons cooking oil
- 1/2 teaspoon vanilla
- 2 snack cups Mandarin oranges, about 4 ounces each, drain juice and save
- 1/3 cup juice saved from oranges
- 4 ounces cream cheese, room temperature
- 4 ounces whipped topping, (1/2 of an 8 ounce tub, cool whip)
Directions
- Preheat oven to 350°, spray an 8 inch round baking dish or cake pan with cooking spray, set aside.
- In a medium mixing bowl add egg, cooking oil, vanilla, juice, and sugar, mix everything together.
- Stir in the flour, baking powder, baking soda, beat for a minute.
- Fold in the mandarin oranges, pour batter into prepared cake pan.
- Bake for about 25-30 minutes, transfer to cooling rack.
- In another bowl, beat together the cool whip and cream cheese.
- After cake is completely cooled, frost and store in refrigerator until ready to serve. Enjoy!
