Mandarin Orange Dessert Cake

Ingredients

  • 1 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1 egg
  • 1/3 cup sugar
  • 3 tablespoons cooking oil
  • 1/2 teaspoon vanilla
  • 2 snack cups Mandarin oranges, about 4 ounces each, drain juice and save
  • 1/3 cup juice saved from oranges
  • 4 ounces cream cheese, room temperature
  • 4 ounces whipped topping, (1/2 of an 8 ounce tub, cool whip)

Directions

  • Preheat oven to 350°, spray an 8 inch round baking dish or cake pan with cooking spray, set aside.
  • In a medium mixing bowl add egg, cooking oil, vanilla, juice, and sugar, mix everything together.
  • Stir in the flour, baking powder, baking soda, beat for a minute.
  • Fold in the mandarin oranges, pour batter into prepared cake pan.
  • Bake for about 25-30 minutes, transfer to cooling rack.
  • In another bowl, beat together the cool whip and cream cheese.
  • After cake is completely cooled, frost and store in refrigerator until ready to serve. Enjoy!
