Small Yogurt Cake

Ingredients

  • 3/4 cup regular or gluten free all purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup butter or shortening
  • 1/3 cup sugar
  • 1 egg
  • 1/2 cup low fat vanilla yogurt
  • 1/2 teaspoon vanilla or almond flavor

Directions

  • Preheat oven to 350°, spray an 7 inch round baking pan with cooking spray, set aside.
  • In a medium mixing bowl cream together the shortening and sugar, add the egg, flavoring and yogurt, mix for about a minute with a hand mixer.
  • Mix in the flour, baking powder, and baking soda, pour batter into prepared baking pan.
  • Bake for 25-30 minutes in preheated oven, or until a toothpick entered in the middle comes out clean.
  • Set on cooling rack, cool completely, frost with your favorite homemade or store bought frosting. Serve and Enjoy!
