Spinach and Cheese Omelet
Ingredients
- 2 or 3 eggs, beaten with fork in small bowl
- 1/4 cup shredded cheese, your favorite
- 1 & 1/2 cups fresh spinach, packed full
- 2 teaspoons butter
- 2 tablespoons shredded parmesan cheese
- salt and pepper to taste
Directions
- In a medium skillet turn burner on medium, add butter when melted saute spinach until wilted and cooked.
- Spread spinach evenly on bottom of the skillet. Turn heat down to low.
- Pour the beaten eggs evenly over the spinach, spread the 1/4 cup of cheese evenly across the top, let cook for about 30 seconds.
- Add salt and pepper to taste.
- With a spatula fold egg mixture in half, cook for about 30 seconds, then flip took cook other side for about 30 seconds. Cook longer if you like, depends on you preference of doneness.
- Remove from skillet to plate, top with shredded parmesan cheese, and salt and pepper to taste. Serve and Enjoy!
