Creamy Lemon Chicken Pasta
Ingredients
- 1 large boneless chicken breast, cut into small pieces
- 2 tablespoons olive oil
- 2 tablespoons butter
- 1 cup chicken broth
- 1/2 cup half and half
- 1 lemon juiced, and teaspoon zest
- 2 tablespoons butter
- 2 tablespoons regular or gluten free flour
- 1/4 cup shredded parmesan cheese, plus more to add when serving
- 6 ounces your favorite pasta, cooked to package directions
Directions
- In a skillet add the olive oil and saute chicken on medium heat until cooked through, turn off burner.
- In another (large) skillet on medium/low heat, add butter, when butter is melted whisk in the flour to make paste, (roux). Add and whisk in the garlic powder, salt and pepper to taste, Turn heat to low.
- Slowly add and whisk in the half and half, and chicken broth, keep stirring until thickened.
- Add the lemon juice, stir in lemon zest. Add the cooked chicken and completely coat with sauce.
- Add the pasta and cheese, toss, if it gets to thick add a little more chicken broth or half and half. Heat through and serve. Serves 2-3, salt and pepper to taste. Enjoy!
