Happy Mardi Gras Bourbon Street Chicken

Happy Mardi Gras! My version of Bourbon Street Chicken.  Prepared with chicken thighs, don't forget a side of Red Beans and Rice...

Bourbon Street Chicken

Ingredients

  • 4 skinless and boneless chicken thighs, cut up in to bite size pieces
  • 3 tablespoons corn starch
  • 2 tablespoons olive oil
  • 2 teaspoons fresh grated ginger
  • 1 teaspoon garlic and herb salt free seasoning
  • 1 teaspoon dried minced onion
  • 1 tablespoon paprika
  • 2 tablespoons light brown sugar
  • 1/4 cup bourbon or apple juice
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon bbq sauce
  • 2 tablespoons soy sauce, low sodium
  • 1/2 cup chicken stock, low sodium
  • pinch of cayenne pepper flakes, optional
  • slice green onions for garnish
  • 2 to 3 cups cooked rice

Directions

  • In a small bowl combine the bourbon or apple juice, apple cider vinegar, bbq sauce, soy sauce, chicken stock, and light brown sugar. Stir until everything is mixed in completely, set aside.
  • In a bowl coat and cover chicken pieces with cornstarch, set aside.
  • Turn burner on stove to medium high, in a large skillet add the olive oil, then add chicken, cook for about 3 minutes then stir, keep cooking chicken for about another 3 minutes. Turn burner down to medium.
  • Sprinkle chicken with garlic herb seasoning, minced onions, grated ginger, and paprika, stir while adding spices. Add a pinch pepper flakes if you like a little heat.
  • Pour liquid ingredients in while stirring, sauce will start to thicken, cook for about another 10 minutes or so until chicken is fully cooked. If sauce gets to thick just add a little more chicken stock. Turn of burner.
  • Serve over rice and top with green onions. Serves about 3 to 4. Add your favorite sides and Enjoy!
