Happy Valentine’s Day – Frosted Maraschino Cherry Cupcakes
Happy Valentine’s Day Cherry Cupcakes
Ingredients
- 1/2 cup regular or gluten free baking mix
- 1 egg
- 3 tablespoons plain yogurt
- 2 tablespoons cooking oil
- 1/2 teaspoon vanilla or almond extract
- 3 tablespoons sugar
- 4 chopped maraschino cherries
- 4 whole maraschino cherries for top
- Your favorite white frosting
Directions
- Preheat oven to 350°, spray cupcake tin with cooking spray, set aside.
- In a medium bowl mix the egg and yogurt together, add the oil, sugar, and almond or vanilla extract, beat with a fork until everything is blended.
- Add the chopped cherries stir, then add in the baking mix and mix until completely blended.
- Pour batter into cupcake tin, makes 4. Bake in preheated oven for 13-15 minutes, until toothpick entered in center comes out clean.
- Set on cooling rack, after cooled take out of pan, frost, and top with whole cherries. Serve and Enjoy!
