Happy Valentine’s Day Cherry Cupcakes

Ingredients

  • 1/2 cup regular or gluten free baking mix
  • 1 egg
  • 3 tablespoons plain yogurt
  • 2 tablespoons cooking oil
  • 1/2 teaspoon vanilla or almond extract
  • 3 tablespoons sugar
  • 4 chopped maraschino cherries
  • 4 whole maraschino cherries for top
  • Your favorite white frosting

Directions

  • Preheat oven to 350°, spray cupcake tin with cooking spray, set aside.
  • In a medium bowl mix the egg and yogurt together, add the oil, sugar, and almond or vanilla extract, beat with a fork until everything is blended.
  • Add the chopped cherries stir, then add in the baking mix and mix until completely blended.
  • Pour batter into cupcake tin, makes 4. Bake in preheated oven for 13-15 minutes, until toothpick entered in center comes out clean.
  • Set on cooling rack, after cooled take out of pan, frost, and top with whole cherries. Serve and Enjoy!
