Sausage Swiss Mushroom Omelet

Ingredients

  • 2 eggs, beaten with a fork
  • 1 small fully cooked sausage patty, crumbled to smaller pieces
  • 2 fresh mushrooms sliced
  • 1 to 2 ounces shredded Swiss cheese
  • 1/2 teaspoon dried minced onions
  • salt and pepper to taste

Directions

  • In an 8 inch skillet add a small pat of butter, turn heat to medium, allow butter to melt and cover bottom of skillet.
  • Pour in beaten eggs slowly and cover bottom of skillet.
  • Spread cheese evenly over eggs, sprinkle with dried minced onions.
  • Add sausage crumbles and mushroom slices on one half of the omelet. Turn heat down to low.
  • Fold egg over the half with sausage, allow to cook about 30 seconds, then turn omelet over and cook other side for about 30 seconds more, until done to your liking.
  • Transfer to a plate, serve with your favorite breakfast sides. Enjoy!
