Bacon and Swiss Biscuits
Ingredients
- 1 cup gluten free biscuit and baking mix
- 1 egg
- 1/2 cup milk
- 1 tablespoon light olive oil
- 3 slices cooked bacon, crumbled
- 1/2 cup shredded Swiss cheese
- 1/2 teaspoon onion powder
- 2 teaspoons dried parsley flakes
- 2 tablespoons baking mix, if needed for shaping dough
Directions
- Preheat oven to 400°, spray a small baking pan (6 inch round) with cooking spray, set aside.
- In a medium mixing bowl beat egg, olive oil, and milk together until frothy.
- Add in the baking mix, parsley flakes, and onion powder. Mix with a fork.
- Now add in the Swiss cheese and crumbled bacon, mix until everything is blended together.
- Shape dough in to a ball, add a tablespoon of baking mix at a time, if to sticky.
- Flatten dough ball to about one inch thick or so to fit in prepared baking pan, cut dough evenly to make 4 biscuits, (with knife push dough over slightly to separate biscuits).
- Set aside, let sit for about 5-10 minutes before putting in oven.
- Bake in preheated oven for about 20-22 minutes, or until golden color. Serve with butter or jam anytime of the day. Enjoy!
