Chocolate Chip Oatmeal Muffins
Ingredients
- 1/2 cup regular or gluten free baking mix
- 1/4 cup quick oats
- 2 tablespoons light brown sugar
- 1 snack cup applesauce, about 4 ounces
- 1 egg
- 2 tablespoons cooking oil
- 1/2 teaspoon vanilla extract
- 3 tablespoons chocolate chips
Directions
- Preheat oven to 350°, spray a cupcake tin with cooking spray, set aside.
- In a medium mixing bowl beat together egg, applesauce, vanilla, and oil with a whisk or fork until blended.
- Add the baking mix, whisk until blended, stir in chocolate chips.
- Pour batter into prepared cupcake tin. Makes about 4.
- Place in preheated oven, bake for about 12-14 minutes, or until toothpick entered in center comes out clean.
- Set on cooling rack, allow to cool a couple minutes.
- Take muffins out of pan, they should come out easily, set muffins on cooling rack, allow to cool or serve warm.
- Drizzle with glaze if you like. Enjoy!
