Chocolate Chip Oatmeal Muffins

Ingredients

  • 1/2 cup regular or gluten free baking mix
  • 1/4 cup quick oats
  • 2 tablespoons light brown sugar
  • 1 snack cup applesauce, about 4 ounces
  • 1 egg
  • 2 tablespoons cooking oil
  • 1/2 teaspoon vanilla extract
  • 3 tablespoons chocolate chips

Directions

  • Preheat oven to 350°, spray a cupcake tin with cooking spray, set aside.
  • In a medium mixing bowl beat together egg, applesauce, vanilla, and oil with a whisk or fork until blended.
  • Add the baking mix, whisk until blended, stir in chocolate chips.
  • Pour batter into prepared cupcake tin. Makes about 4.
  • Place in preheated oven, bake for about 12-14 minutes, or until toothpick entered in center comes out clean.
  • Set on cooling rack, allow to cool a couple minutes.
  • Take muffins out of pan, they should come out easily, set muffins on cooling rack, allow to cool or serve warm.
  • Drizzle with glaze if you like. Enjoy!
