Cinnamon Crunch Oat Flour Coffee Cake

1 1/4 cups oat flour

2 teaspoons baking powder

1/4 teaspoon salt

1 teaspoon cinnamon

1/2 teaspoon all spice

1/4 cup sugar

2 eggs

1/2 cup applesauce

1/4 cup oil

1 teaspoon vanilla

sift together oat flour, baking powder and salt set aside

mix together sugar, eggs, oil, applesauce

add dry ingredients and blend together

pour into prepared round or 8x8 square pan

 

Topping

1/4 cup sugar

1/2 teaspoon cinnamon (or according to taste)

2 tablespoons butter (cold)

3 tablespoons oat flour

Mix together cold butter, oat flour, sugar, and cinnamon in processor or with pastry blender

Crumble evenly on top of batter in pan

Bake at 350° for 35-40 minutes

Sprinkle a little sugar and cinnamon on top of hot cake, about 2 tablespoons sugar and a pinch of cinnamon, this gives a little crunch on top.
