Potato Crust Asparagus Pie

 

Potato Crusted Asparagus Pie

3 small potatoes, sliced thin

2 tablespoons grated parmesan cheese

2 tablespoons olive oil

a couple turns of ground black pepper

8 ounce package of fresh or frozen asparagus cut into one inch lengths, save a few whole for garnish

4 ounces shredded swiss cheese, or your favorite cheese

1/2 cup chopped onion

3 eggs slightly beaten

1/2 cup milk

1 minced tablespoon garlic, from jar

Mix sliced potatoes, olive oil, grated parmesan cheese, and pepper in a bowl, toss to coat

Spread potato mixture and arrange on the bottom of pie plate

Place potato lined pie plate in 400° oven for 15-20 minutes, take out of oven

Place asparagus & onion in frying pan with garlic and a little olive oil saute for a few minutes, pour on to potato crust

Place shredded cheese on asparagus

Mix together eggs and milk, salt and pepper to taste, pour over the rest of the ingredients in pie plate

Garnish with a few whole asparagus on top

Cover with foil and Bake at 400° for 30-40 minutes, take off cover and brown a few minutes on top if you like.
