Collard Greens Three Cheese and Bacon Quiche
Ingredients
- 1 cup shredded cheese, your favorite or shred leftover pieces, I used parmesan, swiss, and colby jack
- 1 can 14 ounce, chopped collard greens, drained and squeeze out liquid
- 4 eggs, slightly beaten with fork
- 3/4 cup half and half or whole milk
- 4 tablespoons bacon pieces
- 1 small onion finely diced, optional
- Salt and fresh cracked Pepper to taste
- 1 – 9 inch frozen pie crust
Directions
- Spread collard greens evenly in pie crust.
- Mix together in a medium bowl the half and half or milk and eggs beat together with fork.
- Add and mix together cheeses, bacon, onions if you are adding, and salt and pepper to taste.
- Pour into pie crust over collard greens, stir around to evenly mix ingredients.
- Place on baking sheet, Bake in pre heated oven at 350° for 50-60 minutes.
- Take out when center is not jiggly and set.
- Let stand for about 10 minutes before cutting and serving.
- Serves 4 as a main dish or 8 as a side dish. Taste good with fruit. Serve and Enjoy!
