Easy Cranberry Chicken over Rice
Ingredients
- 2 boneless chicken breast cut up into bite size pieces
- 1 can whole berry cranberry sauce
- 4 tablespoons bbq sauce
- 2 tablespoons low sodium soy sauce
- 1 or 2 pinches of red paper flakes, to your taste
- salt and pepper to taste
- 3 cups hot cooked white rice.
Directions
- In a skillet on medium high heat add 2 tablespoons olive oil, add the cut up chicken and saute until opaque/white, a few minutes.
- Add cranberry sauce, bbq sauce, soy sauce, red pepper flakes and mix well with chicken.
- Turn heat down to simmer and simmer for about fifteen minutes.
- Serve over hot cooked rice. Serves about 3 or 4. Enjoy!
