Sour Cream Blueberry Loaf
Ingredients
- 1 cup gluten free pancake /waffle mix
- 1 egg
- 1/2 cup milk
- 1/3 cup sour cream
- 1/4 sugar
- 2 tablespoons cooking oil
- 1 cup frozen or fresh blueberries
- *Make sure to choose gluten free ingredients to make it gluten free!
Directions
- In a medium mixing bowl add milk, egg, sour cream, and cooking oil, beat together with a fork.
- Add pancake/waffle mix, mix in completely and beat with fork for about 2 minutes.
- Fold in blueberries.
- Pour batter into a 9×5 loaf pan, sprayed with cooking spray.
- Bake in pre heated oven @ 375° for 35-40 minutes.
- Cool on cooling rack to cool, slice in pan or remove and slice. Enjoy!
