Cajun Chicken over Pasta

Ingredients

  • 1/2 pound boneless chicken breast, cut up in bite size pieces
  • 6 ounces gluten free or regular pasta, cooked to package directions
  • 2 teaspoons cajun seasoning, more or less to taste
  • 2 teaspoons paprika
  • 3 tablespoons olive oil
  • 3 tablespoons butter
  • 1/2 cup milk, more or less to desired thickness
  • 1 tablespoon flour, regular or gluten free
  • salt and pepper to taste


Directions

  • Turn burner on stove to medium, add the olive oil and butter to melt.
  • Add in the cut up chicken pieces, sprinkle in the Cajun seasoning and paprika.
  • Stir everything together, saute until chicken is almost done about 5 minutes.
  • Stir in flour, slowly pour in milk, keep stirring until it starts to thicken.
  • Turn burner down to low, add more milk as needed if it gets to thick.
  • Turn off burner, serve hot over pasta. Serves 2, sprinkle with grated cheese, if you like. Enjoy!
