Cajun Chicken over Pasta
Ingredients
- 1/2 pound boneless chicken breast, cut up in bite size pieces
- 6 ounces gluten free or regular pasta, cooked to package directions
- 2 teaspoons cajun seasoning, more or less to taste
- 2 teaspoons paprika
- 3 tablespoons olive oil
- 3 tablespoons butter
- 1/2 cup milk, more or less to desired thickness
- 1 tablespoon flour, regular or gluten free
- salt and pepper to taste
Directions
- Turn burner on stove to medium, add the olive oil and butter to melt.
- Add in the cut up chicken pieces, sprinkle in the Cajun seasoning and paprika.
- Stir everything together, saute until chicken is almost done about 5 minutes.
- Stir in flour, slowly pour in milk, keep stirring until it starts to thicken.
- Turn burner down to low, add more milk as needed if it gets to thick.
- Turn off burner, serve hot over pasta. Serves 2, sprinkle with grated cheese, if you like. Enjoy!
