Banana Chocolate Chip Coconut Loaf
Ingredients
- 1 cup gluten free baking mix
- 1 egg
- 1/4 cup light brown sugar
- 1/4 cup milk
- 1/4 cup cooking oil
- 1 large banana, mashed with fork
- 1/2 cup chocolate chips
- 1/2 cup shredded
- *Make sure to choose gluten free ingredients to make it gluten free!
Directions
- In a medium mixing bowl mash banana with fork add egg beat together with fork.
- Add light brown sugar, cooking oil, and milk mix together.
- Add baking mix, coconut, and a chocolate chips, stir to mix everything together.
- Beat with fork for about 1 minute.
- Spray a loaf pan with cooking spray, pour batter into loaf pan.
- Bake in a preheated 375° oven for about 45 minutes.
- Place on cooling rack, slice, serve, and Enjoy!
