Banana Chocolate Chip Coconut Loaf

Ingredients

  • 1 cup gluten free baking mix
  • 1 egg
  • 1/4 cup light brown sugar
  • 1/4 cup milk
  • 1/4 cup cooking oil
  • 1 large banana, mashed with fork
  • 1/2 cup chocolate chips
  • 1/2 cup shredded
  • *Make sure to choose gluten free ingredients to make it gluten free!

Directions

  • In a medium mixing bowl mash banana with fork add egg beat together with fork.
  • Add light brown sugar, cooking oil, and milk mix together.
  • Add baking mix, coconut, and a chocolate chips, stir to mix everything together.
  • Beat with fork for about 1 minute.
  • Spray a loaf pan with cooking spray, pour batter into loaf pan.
  • Bake in a preheated 375° oven for about 45 minutes.
  • Place on cooling rack, slice, serve, and Enjoy!
