Banana Walnut Coffee Cake

Ingredients

  • 3/4 cup gluten free baking mix
  • 1 egg
  • 1 medium mashed banana
  • 1/4 cup light brown sugar
  • 1/3 cup plain yogurt
  • 3 tablespoons cooking oil
  • 1/3 cup milk
  • 1/2 teaspoon vanilla flavor
  • 1/2 cup chopped walnuts
  • *Make sure to choose gluten free ingredients to make it gluten free!

Directions

  • In a medium mixing bowl add mashed banana, egg, vanilla, cooking oil, milk, and yogurt.
  • Mix everything together and beat with fork until blended.
  • Add baking mix and mix together, beat with fork for 2 minutes, folding walnuts.
  • Spray a round baking pan with cooking spray, I used a 7 inch spring form pan.
  • Pour the batter in the prepared baking pan.
  • Bake In a preheated at 350° for 45-50 minutes, less if you use a bigger pan.
  • Insert a toothpick or knife in the middle, when it comes out clean cake in done.
  • Cool on cooling rack, drizzle with your favorite glaze, Serve and Enjoy!
