Banana Walnut Coffee Cake
Ingredients
- 3/4 cup gluten free baking mix
- 1 egg
- 1 medium mashed banana
- 1/4 cup light brown sugar
- 1/3 cup plain yogurt
- 3 tablespoons cooking oil
- 1/3 cup milk
- 1/2 teaspoon vanilla flavor
- 1/2 cup chopped walnuts
- *Make sure to choose gluten free ingredients to make it gluten free!
Directions
- In a medium mixing bowl add mashed banana, egg, vanilla, cooking oil, milk, and yogurt.
- Mix everything together and beat with fork until blended.
- Add baking mix and mix together, beat with fork for 2 minutes, folding walnuts.
- Spray a round baking pan with cooking spray, I used a 7 inch spring form pan.
- Pour the batter in the prepared baking pan.
- Bake In a preheated at 350° for 45-50 minutes, less if you use a bigger pan.
- Insert a toothpick or knife in the middle, when it comes out clean cake in done.
- Cool on cooling rack, drizzle with your favorite glaze, Serve and Enjoy!
