Crunchy Peanut Butter Cookie Cake

Ingredients

  • 3/4 cup gluten free flour
  • 1/2 teaspoon baking soda
  • 1/2 cup crunchy peanut butter
  • 2 eggs
  • 1/4 cup sugar
  • 1/4 cup light brown sugar
  • 3 tablespoons butter, room temperature

Directions

  • In a medium mixing bowl cream together the peanut butter and butter.
  • Add the sugars stir until completely mixed.
  • Add the eggs, beat with a fork until blended together.
  • Mix in the flour and baking soda until everything is completely blended together.
  • Spray a round cake pan with cooking spray.
  • Spoon cookie dough into prepared cake pan and spread evenly.
  • Bake in a preheated 350° oven for about 25 minutes.
  • Place on cooling rack, cool, open spring form pan, remove cookie and place on a serving dish.
  • Slice, Serve, and Enjoy!
