Cranberry Chocolate Chip Walnut Cookie Cake
Ingredients
- 1/2 cup regular or gluten free flour
- 1 egg
- 1/4 cup cooking oil
- 1/3 cup light brown sugar
- 1/4 teaspoon baking soda
- 1/4 cup dried cranberries
- 1/4 cup mini semi sweet chocolate chips
- 1/4 cup chopped walnuts
Directions
- Preheat oven to 350°, spray a 7 inch round or square baking pan with cooking spray, set aside.
- In a medium mixing bowl mix egg and oil together with a fork, add the sugar and mix.
- Add the flour and baking soda, mix in everything completely.
- Fold in the chocolate chips, cranberries, and walnuts, stir until evenly mixed.
- Spread batter even in to the prepared baking pan.
- Bake in the preheated 350° oven for about 20 minutes.
- Set on cooling rack, serve warm or cooled. Enjoy!
