Peaches & Cream Oatmeal Muffins

Ingredients

  • 2 peaches and cream oatmeal packets
  • 1/2 cup gluten free or regular flour
  • 1/2 teaspoon baking soda
  • 1 egg
  • 1/2 cup milk
  • 1/4 cup sugar
  • 1/4 cup cooking oil
  • cupcake pan sprayed with cooking spray

Directions

  • Preheat oven to 350°
  • In a medium mixing bowl add milk and egg mix together completely.
  • Stir in oatmeal packets, add cooking oil and sugar, mix.
  • Add the flour and baking soda, stir with fork, about a minute, until all ingredients are blended.
  • Pour batter into cupcake pan, fill each cavity to about 3/4 full. Makes 6 muffins.
  • Bake at 350° for about 20 minutes. Transfer to cooling rack, remove muffins from pan to cool.
  • Serve warm or cool and drizzle with glaze if you like. Enjoy!
