Peaches & Cream Oatmeal Muffins
Ingredients
- 2 peaches and cream oatmeal packets
- 1/2 cup gluten free or regular flour
- 1/2 teaspoon baking soda
- 1 egg
- 1/2 cup milk
- 1/4 cup sugar
- 1/4 cup cooking oil
- cupcake pan sprayed with cooking spray
Directions
- Preheat oven to 350°
- In a medium mixing bowl add milk and egg mix together completely.
- Stir in oatmeal packets, add cooking oil and sugar, mix.
- Add the flour and baking soda, stir with fork, about a minute, until all ingredients are blended.
- Pour batter into cupcake pan, fill each cavity to about 3/4 full. Makes 6 muffins.
- Bake at 350° for about 20 minutes. Transfer to cooling rack, remove muffins from pan to cool.
- Serve warm or cool and drizzle with glaze if you like. Enjoy!
