Happy Halloween Cupcakes
Ingredients
- 3/4 cup regular or gluten free baking mix
- 2 egg whites
- 1/3 cup sugar
- 1/4 cup cooking oil
- 1/3 cup milk
- 12 Oreo cookies, I used the Halloween with orange colored cream in the middle
Directions
- Preheat oven to 350°, spray a cupcake pan with cooking spray, set aside.
- In a medium mixing bowl add the egg whites, cooking oil, and the sugar, beat with a fork, add the milk, mix together.
- Add in the baking mix and blend everything together.
- Fill each cavity of the prepared cupcake pan half full with batter, place a cookie in the center and push down.
- Add more batter on top, until filled to about 3/4 full.
- Bake in the preheated 350 ° oven for about 20 minutes.
- Set on cooling rack to cool partially, remove from cupcake tin and set on cooling rack to finish cooling.
- Frost with your favorite frosting and place another cookie on top to decorate. Makes 6 cupcakes. Serve and Enjoy!
