Andouille Smoked Sausage Peppers Onions Sandwiches

Ingredients

  • 2 dinner size andouille smoked chicken or pork sausage links
  • 2 bratwurst size buns
  • 1 large green pepper cleaned and sliced
  • 1 large sweet onion sliced
  • 2 tablespoons olive oil
  • Your favorite mustard or other condiments

Directions

  • In a large skillet on medium heat, add the olive oil, peppers and onions.
  • Cooked and stir until onion and peppers are tender.
  • Add the sausage links and turn heat down to about low medium.
  • Keep turning sausage links to heat through.
  • When peppers and onions are done/tender remove from skillet into a bowl, set aside.
  • Turn heat back up to medium keep rotating sausage until they looked charred on each side.
  • Add the peppers and onions again to heat through. Turn off heat.
  • Cut open the buns add your favorite condiments, place a sausage, peppers and onions inside.
  • Serve with your favorite side dishes. Enjoy!
