Avocado Spice Bar Cake

Ingredients

  • 1 cup gluten free or regular baking mix
  • 1 ripe medium size avocado, mashed
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup cooking oil
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon vanilla extract
  • 1/2 cup raisins

Directions

  • Preheat oven to 350°, spray a 9×5 loaf baking pan with cooking spray, set aside.
  • In a medium mixing bowl add the eggs, and mashed avocado, beat together with a fork.
  • Add the cooking oil, milk, vanilla extract, mix everything together.
  • Stir in baking mix, allspice, and cinnamon. Beat all together with a fork for about a minute.
  • Pour batter into the prepared baking pan.
  • Bake at 375 ° for about 45 minutes.
  • Set on cooling rack, completely cool and frost with your favorite cream cheese or butter cream frosting. Slice and Enjoy!
