Avocado Spice Bar Cake
Ingredients
- 1 cup gluten free or regular baking mix
- 1 ripe medium size avocado, mashed
- 1/2 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup cooking oil
- 1/2 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon vanilla extract
- 1/2 cup raisins
Directions
- Preheat oven to 350°, spray a 9×5 loaf baking pan with cooking spray, set aside.
- In a medium mixing bowl add the eggs, and mashed avocado, beat together with a fork.
- Add the cooking oil, milk, vanilla extract, mix everything together.
- Stir in baking mix, allspice, and cinnamon. Beat all together with a fork for about a minute.
- Pour batter into the prepared baking pan.
- Bake at 375 ° for about 45 minutes.
- Set on cooling rack, completely cool and frost with your favorite cream cheese or butter cream frosting. Slice and Enjoy!
