Chicken and Mushroom Alfredo Pasta

Ingredients

  • 1/2 pound boneless chicken breast, cut into bite size pieces
  • 8 ounce fresh sliced mushrooms
  • 2 tablespoons olive oil
  • 1 tablespoon umami mushroom seasoning blend
  • 2 teaspoons onion powder
  • 2 teaspoons paprika
  • 1 teaspoon garlic powder
  • 1 & 1/2 cups milk
  • 4 ounces cream cheese
  • 1/4 cup grated parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 6 ounces of your favorite pasta, regular or gluten free, cooked to package directions
  • salt and pepper to taste

Directions

  • In a large skillet on medium heat add olive oil, chicken, and mushrooms, toss and cook for about five minutes.
  • Turn heat down to low, add milk, stir in parmesan cheese and cream cheese, stir until melted. 
  • Stir in all the seasonings, add in the mozzarella cheese and stir until combined.
  • Pour immediately over hot cooked pasta, add salt and pepper to taste, and top with more grated parmesan cheese if you like. Serves about 2-3. Enjoy!
