Chicken and Mushroom Alfredo Pasta
Ingredients
- 1/2 pound boneless chicken breast, cut into bite size pieces
- 8 ounce fresh sliced mushrooms
- 2 tablespoons olive oil
- 1 tablespoon umami mushroom seasoning blend
- 2 teaspoons onion powder
- 2 teaspoons paprika
- 1 teaspoon garlic powder
- 1 & 1/2 cups milk
- 4 ounces cream cheese
- 1/4 cup grated parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 6 ounces of your favorite pasta, regular or gluten free, cooked to package directions
- salt and pepper to taste
Directions
- In a large skillet on medium heat add olive oil, chicken, and mushrooms, toss and cook for about five minutes.
- Turn heat down to low, add milk, stir in parmesan cheese and cream cheese, stir until melted.
- Stir in all the seasonings, add in the mozzarella cheese and stir until combined.
- Pour immediately over hot cooked pasta, add salt and pepper to taste, and top with more grated parmesan cheese if you like. Serves about 2-3. Enjoy!
