Strawberries with Sour Cream Shortcakes

Ingredients

  • 3/4 cup regular or gluten free baking mix
  • 1 egg, slightly beaten with fork
  • 1/4 cup sour cream
  • 3 tablespoons sugar
  • 1 pound strawberries, cleaned and sliced
  • 1 or 2 tablespoons sugar
  • whipped cream or whipped topping

Directions

  • Preheat oven to 350 degrees, Spray a 6 cavity muffin top pan with cooking spray, set aside. (you can use a muffin pan)
  • Mix together the sliced strawberries and 1 or 2 tablespoons sugar together cover and set in refrigerator.
  • In a medium mixing bowl add the egg, sour cream and sugar, beat together with a fork.
  • Add the flour and mix everything together, batter will be thick, Spoon batter into the muffin top pan, should make 6.
  • Place in preheated oven, bake for about 14 minutes, transfer to cooling rack.
  • After cooled cut shortcake in half and add strawberries to bottom half add some whipped cream, then top with other half of shortcake, add more whipped cream and strawberries on top. Serves about 6. Enjoy!
