 Easy and quick main dish, Boneless Chicken Breast cut into bite size pieces with your choice of vegetables. Choose the vegetables you like or what you already have in the fridge, zucchini, broccoli, cauliflower, green beans, green or red peppers, etc…

Cajun Chicken and Vegetables

Ingredients

  • 1/2 pound boneless chicken breast, cut into bite size pieces
  • 1 cup sliced zucchini
  • 1&1/2 cups cauliflower, cut up
  • 1&1/2 cups broccoli, cut up
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • salt and pepper to taste

Directions

  • In a large skillet on medium heat, add the olive oil and butter, now add the cut up chicken and stir fry for about 4 minutes.
  • Add the vegetables and sprinkle the Cajun seasoning over everything, keep stirring until vegetables are tender, not mushy.
  • Serve over rice or pasta if you like. Serves 2. Enjoy!
