Taco Casserole
Ingredients
- 1/2 pound ground beef
- 1 can diced tomatoes with green chilies, (10 ounce can)
- 1 can petite diced tomatoes, 15 ounce
- 1 can pinto beans, 15 ounces, drained and rinsed
- 2 teaspoons chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1 onion powder
- salt and pepper to taste
- 1&1/2 cups crushed tortilla chips
- 1 cup shredded cheddar or colby jack cheese
Directions
- Preheat oven to 350°, spray an 11×7 baking dish with cooking spray, set aside.
- Brown the ground beef in a skillet, then add both cans of tomatoes, the pinto beans, and all the spices. Cook for about 10 minutes
- Spread half of the crushed tortilla chips on the bottom of the baking dish.
- Pour the meat mixture over tortilla chips, top with the remaining crushed tortilla chips.
- Spread the shredded cheese evenly on top, cover with foil. Bake for about 25 minutes in the preheated oven.
- Cut and serve, makes about 3-4 servings. Taste good with lettuce, tomato and sour cream. Enjoy!
