Maraschino Cherry Muffin Tops

Ingredients

  • 3/4 cup gluten free or regular baking mix
  • 1 egg, slightly beaten with fork
  • 1/4 cup sugar
  • 1/4 cup milk
  • 2 tablespoons cooking oil
  • 2 tablespoons maraschino cherry juice from jar
  • Frosting, store bought or homemade
  • Maraschino cherries cut in half and patted dry

Directions

  • Preheat oven to 350°, spray a muffin top pan with cooking oil spray, set aside.
  • In a medium mixing bowl add egg, sugar, milk, cherry juice, and cooking oil, mix until blended.
  • Add the baking mix and beat in with a fork for about a minute and everything is blended together.
  • Pour batter into prepared muffin top pan and bake about 12 minutes in preheated oven.
  • Set on cooling rack to cool, remove from pan, after completely cooled frost and top with Maraschino cherries. Makes 6, Serve and Enjoy!
