Banana Mini Loaves for Two
Ingredients
- 2/3 cup regular or gluten free baking mix
- 1/2 ripe banana, mashed
- 1 egg
- 1/4 cup light brown sugar
- 1/4 cup milk
- 1/2 teaspoon vanilla
- 2 tablespoons cooking oil
Directions
- Preheat oven to 350°, spray 2 small loaf pans with cooking spray, set aside.
- In a medium mixing bowl add and mix the mashed banana, egg, cooking oil, milk, vanilla, and light brown sugar.
- Stir in the baking mix, beat with fork for a couple minutes until all is blended.
- Pour batter evenly divided into the two mini loaf pans.
- Bake in preheated oven, for about 30 minutes, or until toothpick entered in center comes out clean, set on cooling rack.
- Serve warm or cooled, with butter or cream cheese if you like, Enjoy!
