Rice Cooker Black Beans & Rice

Ingredients

  • 1 cup rice (use rice cooker measure cup) (rinse rice before cooking)
  • 1 can black beans about (15 ounce), drained & rinsed
  • 1/3 cup diced green pepper
  • 8 ounces broth, chicken beef, or vegetable
  • 1 tablespoon paprika
  • 1-2 teaspoons chili powder
  • 1-2 teaspoons ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 2 tablespoons butter
  • salt and pepper to taste

Directions

  • Place everything in the rice cooker, stir. Push button down to start cycle.
  • Stir again in a few minutes when it starts getting hot.
  • Check a little bit later stir again.
  • If liquid is gone, and the rice cooker hasn’t finished its cycle. It might start to stick a little on the bottom. If So, turn off and let sit for a few minutes with lid on to finish cooking.
  • Garnish with cheese, green onions, more diced green pepper, or hot sauce if you like. Enjoy!
