Chicken Stroganoff

Ingredients

  • 1/2 to 3/4 pound boneless skinless chicken breast, cut into bite size pieces
  • 2 tablespoons olive oil
  • 2 tablespoons butter
  • 4 ounces sliced mushrooms
  • 1/4 cup chopped onions
  • 1 cup chicken stock or broth
  • 2 teaspoons worcestershire sauce
  • 1/2 teaspoon garlic powder
  • 2 teaspoons Umami mushroom seasoning, or your favourite seasoning blend
  • 1/2 cup sour cream
  • 2 teaspoons parsley flakes
  • 6 ounces egg noodles cooked to package directions, then tossed with tablespoon butter

Directions

  • Turn burner to medium heat, in a medium size skillet add olive oil and chicken, toss cook for a few minutes.
  • Add sliced mushrooms, chopped onions, and butter, mix in with chicken and cook about 5 minutes.
  • Add chicken broth, add worcestershire sauce, garlic powder, umami seasoning blend, or your favorite seasoning blend let cook for a few more minutes, until chicken is cooked completely.
  • Turn off heat, let sit a few minutes before adding sour cream, stir sour cream.
  • Turn heat on low to heat through. Stir in parsley flakes. If sauce is thin mix a tablespoon corn starch with a little water and add to stroganoff, stir until sauce thickens.
  • Salt and pepper to taste, Turn off heat, Serve over buttered egg noodles. Serves 2-3. Enjoy!
