Chicken Stroganoff
Easy Chicken Stroganoff for Two, over buttered egg noodles…
Chicken Stroganoff
Ingredients
- 1/2 to 3/4 pound boneless skinless chicken breast, cut into bite size pieces
- 2 tablespoons olive oil
- 2 tablespoons butter
- 4 ounces sliced mushrooms
- 1/4 cup chopped onions
- 1 cup chicken stock or broth
- 2 teaspoons worcestershire sauce
- 1/2 teaspoon garlic powder
- 2 teaspoons Umami mushroom seasoning, or your favourite seasoning blend
- 1/2 cup sour cream
- 2 teaspoons parsley flakes
- 6 ounces egg noodles cooked to package directions, then tossed with tablespoon butter
Directions
- Turn burner to medium heat, in a medium size skillet add olive oil and chicken, toss cook for a few minutes.
- Add sliced mushrooms, chopped onions, and butter, mix in with chicken and cook about 5 minutes.
- Add chicken broth, add worcestershire sauce, garlic powder, umami seasoning blend, or your favorite seasoning blend let cook for a few more minutes, until chicken is cooked completely.
- Turn off heat, let sit a few minutes before adding sour cream, stir sour cream.
- Turn heat on low to heat through. Stir in parsley flakes. If sauce is thin mix a tablespoon corn starch with a little water and add to stroganoff, stir until sauce thickens.
- Salt and pepper to taste, Turn off heat, Serve over buttered egg noodles. Serves 2-3. Enjoy!
